There’s a great spot in Rutherford, NJ I used to frequent while traveling for a client called Park & Orchard. They made a serious vegetarian meatloaf that was enough for two meals. Not only that, it was a healthy food I could enjoy on the road.
Since I’ve slowed my travel schedule, I am getting back in the kitchen and made my own veggie “meat”loaf last night. It’s not quite P&O, but it’s darned good. Here’s what’s in it: Quinoa, Black Beans, Northern Beans, Flaxseed, Oatmeal, Red wine caramelized onions, and garlic. For some added punch, I added some chili hot sauce and a touch of chili powder in addition to the necessary salt and pepper. I topped it with an extra sharp Cabot Clothbound Cheddar and it was great. Two 1″ slices filled me up no problem.
Tonight, I’m going to top it with some guacamole and cilantro low-fat sour cream.

According to package directions, cook 1/2 cup of qunioa and 1 cup green lentils. Simultaneously, empty 1 can black beans and 1 can great northern beans into a medium saucepan and cook at med-low heat until most of the liquid has evaporated. Season with a bit of garlic powder, salt, and pepper.
Cut 1 yellow onion and 4 cloves garlic and cook w/ olive oil until partially translucent. Add about 1/2 cup red wine vinegar (we used a homemade one – another post on that later) and reduce until little liquid is left. Remove from the heat and using a food processor, pulse the onion mixture for about 20 seconds.
Once the black beans are ready, mash them up and mix them with the onion/garlic combo, lentis, and quinoa and add about 1/2 cup of oatmeal and if you have it, about 1/4 cup of ground flaxseed.
Preheat oven to 375 degrees
Pour mix (will be thick) into a meatloaf/bread pan and bake for about 30 minutes. Take the loaf out, flip it onto a cookie sheet, shred cheddar on top and place back in oven on broil until cheese has melted.
Take out and enjoy!
Had it again tonight, and let me reiterate that this was a homemade creation. I served it with some guacamole which was a great topping for it.
